Sometimes you just want a good old chocolate chip cookie, and when that happens this is the only recipe we reach for. Butter beaten with brown and granulated sugar, a little orange sugar or orange essence, and 230g of chocolate chips folded through the dough. Fifteen minutes in the freezer, 8-9 minutes at 190°C, and they come out of the oven still looking underdone. Makes around 18-20.
That last part is most of the recipe. Take them out while they look a touch raw, then finish them with salt flakes.
What you’ll need
Makes around 18-20 cookies.
- 110g butter, at room temperature
- 150g brown sugar
- 70g granulated sugar
- 5g orange sugar or 2ml orange essence
- 1 large egg, at room temperature
- 5ml vanilla extract
- 250g flour
- 4g baking soda
- 2g baking powder
- 3g salt
- 230g chocolate chips
Method
- Beat the butter with the sugars until combined.
- Beat in the egg and vanilla extract.
- Add the flour, baking soda, baking powder and salt, and mix until the dough comes together.
- Fold in the chocolate chips, then freeze the dough for 15 minutes.
- Bake at 190°C for 8-9 minutes — they should look underdone when they come out.
- Sprinkle the cookies with salt flakes.
A couple of tips
- Room temperature, both of them. The butter and the egg go in soft, not straight from the fridge.
- The 15 minutes in the freezer are part of the method. The dough is meant to go into a hot oven cold, so don’t skip it.
- Underdone is the target. At 190°C that is 8-9 minutes. If they look properly baked when they come out of the oven, they have had too long.
