These are the chocolate chip cookies we come back to: soft and chewy through the middle, crisp at the edges, with a light orange note running through the dough. Melted butter, one bowl, then 15 minutes in the freezer and 8 to 9 minutes at 190°C. Salt flakes go on after they come out of the oven.

What you’ll need

Makes around 18-20 cookies.

  • 110g unsalted butter, melted & cooled slightly
  • 150g brown sugar
  • 70g granulated sugar
  • 5g orange sugar or 2ml orange essence
  • 1 large egg, room temp
  • 5ml vanilla extract
  • 250g flour
  • 4g baking soda
  • 2g baking powder
  • 3g salt
  • 230g chocolate chips

Method

  1. Beat the melted butter with the sugars until combined.
  2. Beat in the egg and vanilla extract.
  3. Add the flour, baking soda, baking powder and salt. Mix until the dough comes together.
  4. Fold in the chocolate chips. Freeze the dough for 15 minutes.
  5. Bake at 190°C for 8-9 minutes — they should look underdone when they come out.
  6. Sprinkle the cookies with salt flakes.

A couple of tips

  • The freezer step is part of the recipe. Fifteen minutes, straight after the chips go in.
  • Underdone is the right look. The recipe wants them out at 8 to 9 minutes, before they look finished.
  • Orange, two ways. Either 5g orange sugar or 2ml orange essence gives you that light citrus note.
