Blueberry Yogurt “Cookies”

Are these Blueberry Yogurt “Cookies” worth the hype? 🤫 Definitely worth it! 🫶

They are a perfect breakfast idea for any summer day 🔆

Ingredients:

  • 200g Greek yoghurt

  • 1 tsp maple syrup (optional)

  • 1 tsp vanilla extract

  • 150g blueberries

  • 70g smooth peanut butter

  • 300g dark chocolate

  • Desiccated coconut or strawberries (optional, for topping)

Instructions:

  1. Mix together the yoghurt, vanilla and maple syrup (if using), then stir in the blueberries so they’re all covered in yoghurt.

  2. Line a plate with baking paper and spoon the mixture in clusters onto the baking paper. Place this into the freezer for 1-2 hours until hardened.

  3. Then remove and top with a little peanut butter. Place back in the freezer for a few minutes to harden up.

  4. Then coat in melted chocolate, sprinkle with a little coconut and set in the freezer for a few minutes to harden.

  5. Keep them frozen until ready to enjoy!❤️
