This cookie dough is our favorite recipe. It’s eggless and heat treated flour makes it a safe treat even on its own. It’s melting creamy with a delightful crunch of chocolate chips.

Whenever we have a child’s birthday party, we’d bring a bunch of these Cookie Dough Pretzel Sandwiches with us and they never fail to please the crowd.

Which topping would you choose? Chewy S’mores or crunchy sprinkles? 😜 Maybe half and half?

Cookie dough Pretzel Sandwiches.

Ingredients:

Cookie dough:

  • 140g heat-treated all-purpose flour* (Place the flour in a microwave-safe bowl and heat on high for 30 seconds at a time, stopping and stirring after each. Stir well to make sure none of the flour burns. Use a thermometer to test the flour in several places to make sure it has reached 74°C. If you get a lower reading in one area, stir and heat for an additional 30 seconds until it’s all ready.

  • 4g cornstarch

  • 3g salt

  • 85g unsalted butter, softened

  • 100g brown sugar

  • 7g cornstarch whisked with 40ml room temperature milk

  • 5ml vanilla extract

  • 100g semi-sweet chocolate chips

to assemble:

  • 300g pretzels, salted

  • 100g chocolate chips, melted

  • Mini-marshmallows or sprinkles

Instructions:

  • In a medium bowl, whisk the heat-treated flour, cornstarch, and salt together. Set aside.

  • Beat the butter on medium speed in a large bowl until smooth and creamy, about 2 minutes. Add the brown sugar and mix on medium until light and fluffy, about 3 full minutes. Using a rubber spatula, scrape down the sides and up the bottom of the bowl as needed. Add the cornstarch and milk mix and vanilla extract and mix until fully incorporated, about 2 minutes.

  • Add half of the flour mixture and mix on low just until the powdery texture of the flour disappears, about 15 seconds. Immediately add the rest of the flour mixture and mix until combined. Remove the bowl from the mixer and use a rubber spatula to fold in the chocolate chips.

  • Shape pretzel and cookie dough sandwiches. Cool while you prepare the chocolate melt.

  • Melt the chocolate chips in the microwave at 20sec intervals mixing well after each one.

  • Dip in melted chocolate and decorate with mini-marshmallows or sprinkles.

  • Cool to set for at least 30 min.
