Caramel Pumpkin Spice Cookies 🍁

Ingredients:

  • 260g all-purpose flour

  • 1 tsp baking soda

  • 2 1/4 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/2 tsp ground nutmeg

  • 1/4 tsp ground cloves

  • 1/2 tsp salt

  • 120g oats

  • 230g butter, melted and slightly cooled

  • 45ml maple syrup

  • 150g brown sugar

  • 100g granulated sugar

  • 1 egg yolk

  • 170g pumpkin puree (bake at 210°C for 30 min until tender, peel, mash, blot well)

  • 2 tsp vanilla extract

  • 270g caramel milk or semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 180°C.

  2. Whisk the flour, baking soda, cinnamon, spices, salt, and oats together in a large bowl. Set aside.

  3. Whisk the melted butter, maple syrup, brown sugar, granulated sugar, egg yolk, blotted pumpkin, and vanilla extract together until combined. Pour into dry ingredients and mix everything together until completely combined. Fold in the chocolate chips.

  4. Scoop cookie dough. Flatten slightly. Bake for 12-15 minutes until lightly browned on the sides. The centers will look very soft.

  5. Remove from the oven and allow cookies to cool.
