Recipe: Banana Chocolate Muffins

Ingredients:

  - 170g butter, melted

  - 50g white sugar

  - 110g brown sugar

  - 2 eggs

  - 5ml vanilla extract

  - 4 ripe bananas

  - 220g all-purpose flour

  - 6g baking soda

  - 3g salt

  - 180g chocolate chips

  - 117g pecans, chopped

Instructions:

  1. In a large mixing bowl, beat the sugars and butter for about 1 minute on medium-low speed.

2. Then add the vanilla extract along with the eggs and mix them in on medium speed.

3. Now in a separate bowl, mash up 4 ripe bananas. Then add them to the muffin batter.

4. Sift in the flour, add the baking soda. Mix in the salt.

5. Lastly, fold in the chocolate chips and chopped pecans.

6. The recipe yields 12-13 regular muffins or 22 mini muffins.

7. Before baking, top the muffins with extra chocolate chips and bake at 210°C for 5 min then lower to 180°C and continue baking for for 15-18 minutes until the toothpick comes out clean.
